Nishiki Ramen originates from Odate-shi, Akita Prefecture, in 1994. From its home base in Akita Prefecture, the Nishiki Group has opened many branches. Each of its restaurants serves different broths and toppings, continuing innovating unique ramen. Despite the differences between their restaurants, the original aspiration of making delicious and healthy ramen never wavered. In the pursuit of safe and delicious noodles, Nishiski only uses Hokkaido-grown wheat to make its noodles. The combination of its handcrafted noodles with broths made from quality chicken bones, pork bones, seafood and vegetables result in the delectable menus at different Nishiki restaurants. Haru-Yo-Koi is a hybridized form of the highly acclaimed Japanese wheat Haru-Yutaka. Characterized by its rich flavor and stretchiness, it was the most expensive wheat produced worldwide in 2012. Nishiki noodles are handcrafted from 100% Haru-Yo-Koi wheat.
